Simple Grilled Barbecue Chicken Breast

Barbecue chicken breast, broccoli, and corn, it doesn’t get simpler than that! Today was crazy and dinner was, honestly, an afterthought. Everything in the fridge was old and everything in the freezer was, well, frozen. I was tired and I had a headache, yet for some reason, my kids still expected me to feed them! The nerve!

Barbecue sauce

Salt, pepper, seasonings

 

As I was defrosting a couple of frozen chicken breasts in the microwave, I was heating up my trusty George Foreman grill. I dry rubbed some seasonings on the breast, grilled them, then covered them in barbecue sauce. Next was a bag of frozen broccoli florets in the microwave, as I opened a can of corn and heated it on the stove.

 

The Verdict

It was far from fancy, but Simple Grilled Barbecue Chicken was a hit!

Heavenly Margherita Naan Pizza

I love pizza, but I really love Margherita Pizza. I have been trying for months to create a margherita pizza at home that rivaled the one that I used to get from 518 West Italian Grill in Raleigh, NC and I finally did it! My kids and I picked up some naan bread while at Wal-Mart to make personal pizzas for lunch today, and while I made traditional cheese pizzas for the kids, I decided to try making myself a margherita pizza.

Margherita Naan Pizza

1 naan bread

Mozzarella cheese (I used sliced mozzarella)

¼ can diced tomatoes

Fresh basil or (Mrs. Dash Tomato Basil Garlic)

Garlic Powder

Olive Oil
Preheat oven to 425. Lightly brush the naan bread with olive oil and cover with mozzarella slices. Sprinkle the cheese with garlic powder, then the diced tomatoes. I was out of fresh basil, so  I sprinkled the tomatoes with the Mrs. Dash to give it added flavor and color. Bake on the lowest rack for about 10 minutes.
The Verdict
The Margherita naan pizza was delicious! The crust was crispy, the cheese was gooey, and the tomatoes were juicy. My only disappointment was that I did not make two pizzas!

Grilled Quesadillas

Mexican Monday, Taco Tuesday, Fajita Friday…yep, we like Mexican food in my house! This week I made Grilled Quesadillas, and my husband, who does not normally eat Mexican food, thought they were great. This easy recipe is a great way to use leftover chicken breast.

4 soft tortillas

1 cup cooked shredded chicken breast

½ cup salsa

¼ cup taco sauce

½ cup shredded cheese
Mix the cooked chicken, salsa, and taco sauce together in a bowl.  Fill half of a tortilla with the chicken mixture, top with shredded cheese, and fold over. Place the folded tortilla on the grill (I used my George Foreman Grill), cooking about 2-3 minutes on each side.

 
The Verdict
Grilled Quesadillas are quick, easy, and delicious! If you like Mexican, this is a yummy at-home alternative to Taco Bell.

My Macaroni & Tuna Salad

It has been a long, hot summer here in North Carolina and I have been trying to avoid using my oven, I have resorted to my salad arsenal to get us through until things cool off. So, why was I surprised when my ten-year-old son, B3, asked the other day, “Mom, may we have some of the tuna stuff with macaroni?” He was referring to my macaroni & tuna salad, which is usually reserved for summertime cookouts. So, I shrug my shoulders and say, “Yeah, Macaroni & Tuna Salad, that sounds good.” I cannot take credit for this recipe, my Aunt Wendy makes the best mac & tuna salad, so I stole here recipe years ago and made it my own.

Macaroni & Tuna Salad

 

Recipe 

1 box Elbow macaroni

2 can tuna, drained

1/2 cup sweet pickle relish

1 cup mayonnaise or salad dressing

3 tablespoon mustard

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

 

The Verdict 

My family and I love Macaroni & Tuna Salad on a summer day. It is perfect as a side dish with hamburger or fried chicken. Although in my house, you are just as likely to find one of us eating a large serving of Macaroni & Tuna Salad all by itself, and probably out of a cereal bowl!

So Simple Chicken Salad Sandwich

On the way back from the salon on Saturday, I was talking to my sister on the phone when the hunger pangs hit me and I needed something to eat, right then and there. As I pulled into McDonald’s, I realize that everyone in my small town must have decided to go to McDonald’s at the same time. Living in a town with only one McDonald’s occasionally has it drawbacks! As I was complaining to my sister, she began telling me about the chicken salad sandwich that she had just finished eating and it sounded really good. Chicken Salad? Hmmmm….I have not had chicken salad in a long time. So, I pull out of McDonalds’ drive through and head home to make chicken salad. Oh, I promptly thanked my sister for not only saving me money, but calories as well.

 Chicken Salad Sandwich

Recipe

1 cup shredded chicken (I  had leftover rotisserie chicken in the fridge)

2 tbs mayonnaise

1 1/2 tbs relish

1 tsp ranch dressing

Mix all of the ingredients in a bowl and serve on toast, on crackers, or eat it plain.  By the way, my sister was the one who suggested that I add a little ranch dressing to the salad and it made it taste even better!

The Verdict

Confession, this was only my second time ever making chicken salad, but I am so glad that I did…it was delicious, just want I needed on a hot summer day.

Not So Sloppy Joes!

Kraft Recipes has a recipe called “Cheeseburger Joes” that I have been making for the past few years. While my husband likes the Manwich Sloppy Joes, I have never liked the canned stuff, so I was thrilled to find a “Joe” recipe that I could easily make myself.

Cheeseburger Joes

My version of Kraft Recipes Cheeseburger Joes.

I followed Kraft’s recipe to the letter, except I used shredded cheese, instead of sliced american cheese.

RECIPE

1 lb. lean ground beef
1/2 cup KRAFT Original Barbecue Sauce
1/4 cup ketchup
4  hamburger buns
4  KRAFT Singles

BROWN meat in large skillet; drain.  ADD barbecue sauce and ketchup; mix well. Cook 5 min. or until heated through, stirring occasionally. FILL buns with meat mixture and Singles.

The Verdict

Easy dish to make that the kids love.

Cheeseburger Mac – My Kids Love This!

I subscribe to the “Food & Family” Magazine that Kraft Foods produces and they have a recipe called ‘The Cheesiest Cheeseburger Mac‘ that is the basis for my cheeseburger mac. I made a few changes to the original recipe, of course. For starters, I prefer Kraft Deluxe Macaroni & Cheese, instead of the macaroni & cheese dinner. Also, I use less beef than the original recipe calls for, it was a little too beefy, and too dry, for me.

RECIPE

1 pkg. Kraft Deluxe Macaroni & Cheese

1/2 lb cooked ground beef

2 slices American Cheese

1/4 cup ketchup

1 tbsp. mustard

 

Prepare the macaroni & cheese according the package directions. Add the cooked ground beef,  American cheese, ketchup, and mustard. Cook and stir until heated through.   The dish smells like a cheeseburger! My kids love to add more ketchup to the Cheeseburger Mac before they eat it.

The Verdict

This is one of those quick and easy dishes that any mom can make, and it is a great hit with the kids!
