Sometimes, I do not feel like cooking. Sometimes, I can be lazy. Okay, maybe not “lazy”, but due to the stress of life, combined with two picky teenagers, I just don’t want to cook. However, the law says that I have to feed my kids, so leftovers to the rescue!

The other night, I had leftover chicken breast in the fridge and we were a bit sick of eating chicken. How could I breathe new life into my all too familiar leftover chicken breasts? How could I turn this chicken into something very different from our usual leftovers fare?

I created “Second Life Chicken Cordon Bleu”!

Yes, I made chicken cordon bleu using leftover chicken breasts and it was VERY good.

Leftover cooked chicken breast

1 breadcrumbs

3 oz. deli sliced ham

3 oz. sliced Swiss chese

Melted butter

Your favorite seasonings

Preheat oven to 350˚. Line baking pan with foil. Slice cooked chicken breasts in half lengthwise. Place ham and cheese in between sliced chicken breast. In separate bowl, combine breadcrumbs with seasonings. Mix in a small amount of melted butter in the breadcrumb mixture. Top stuffed chicken breast with breadcrumb mixture, drizzling remaining melted butter over the entire breast. Cover pan with foil and bake in oven on the lower rack for about 10 – 12 minutes, or until hot. Uncover and bake on top rack for another 2 – 3 minutes.

The Verdict

“Second Life Chicken Cordon Bleu” was very good! The chicken was not at all dry and the addition of the ham and cheese ensured that this chicken breast tasted nothing like it did in its’ previous life. I will have to make this again.
